from every angle

You’ve got an appointment at the gourmet restaurant l’Édulis in Granville at 4:30pm, where you’ll meet Jonathan Datin, chef of the establishment he opened in 2014. Drawing on his experience with chefs such as Philippe Gauvreau and Régis Marcon, Jonathan’s cuisine is characterized by fresh seasonal produce and homemade cooking.

Once you’ve settled into Jonathan’s kitchen, he’ll give you a quick introduction to blue lobster. The lobster, a crustacean that has earned its place in French gastronomy, is particularly well represented on the Cotentin coast and in theChausey archipelago. Thanks to the combined action of the Conservatoire du Littoral and local fishermen, these resources are examined, counted and preserved to keep them intact for years to come. This is how we can still enjoy this famous crustacean, caught in its natural environment using traps.

the chef's apprentice

Jonathan will show you how to cook and peel, and of course it’s up to you! After this effort, your chef will explain the menu that will be concocted for you afterwards, the garnish that will be used, how it will be cooked, and so on.

It’s an opportunity to discover new flavors according to the season, such as wild fennel, an aromatic plant that grows in particular on Granville‘s Pointe du Roc.

A break before

TASTING

After making your mouth water, Jonathan will have to prepare for the restaurant ‘s opening in the evening, and invites you to stroll around Granville. You can take a stroll around the fishing port, for example, or along the ramparts of the Upper Town.

At 7pm, head back to Edulis, where a table is dedicated to you. Enjoy a visual feast, then savor the 100% lobster menu that Jonathan has prepared for you, with your participation a few hours beforehand. An explosion of flavors guaranteed!
