A visit to the workshop allows pupils to discover the life cycle of the salmon, from the river to the sea, and to understand its role in the ecosystem. They then learn how the artisan selects fresh, high-quality fish, respecting the seasons and resources.
The various stages of processing are explained simply: salting by hand, resting time, slow drying and traditional smoking using natural wood. A comparison with industrial methods helps visitors to understand the differences in taste, time and quality.
Interactive and educational, the tour invites pupils to observe, handle and ask questions, to better understand the origins of food and the importance of informed consumption.
