Jean-François Perrin

Originally from the Yvelines, Jean-François Perrin took his first steps on the beaches of Granville Terre et Mer. With a passion for gastronomy, he obtained a Hotel Technician’s Certificate and a BTS at the Paris Hotel School. He then worked in London at the Connaugth Hotel, ranked as Europe’s top luxury hotel in 2009, first as a chef de rang and then as a sommelier. On his return to France, he continued his professional career at the Chalet des Iles in Paris as Manager.

It was in 2003 that Jean-François Perrin decided to give pride of place to seafood and a region he loved, by opening his restaurant “Pierrot L’Hippocampe” in Granville. A few years later, in 2010, Jean-François took a new turn in his career. Wishing to share his passion for Norman gastronomy, he became a trainer for the West Normandy Chamber of Commerce and Industry. He then joined the “Business Support” department as a development officer for the marine resources and aquaculture sector. With his colleague Ludovic Legendre and the support of the Normandy Region, he runs an educational fishtruck called “Les poissons, Pépites de Normandie”. They promote forgotten and neglected local fish through affordable recipes.

A touch of passion and a sprinkling of local produce to cook up recipes that are easy even for youngsters!

One of his fondest gastronomic memories took place in 2023, when Le Marité celebrated its 100th anniversary. To mark the 100th anniversary of Le Marité in June 2023, Jean-François and his colleagues organised a story-telling meal, sharing with guests from Saint-Pierre and Miquelon their choice of produce and how to cook it. It’s a memory that stays with him. Jean-François also remembers very well the child who thought that a fillet of Tacaud cheese was better than chocolate! One of the best rewards for a Chef.

His proudest moment came at the Trophée des Léopards. He was heavily involved in the first edition of the Trophée des Léopards Normandy cookery competition in 2021 in Granville, and was proud to show the jury, made up of Michelin-starred chefs and Meilleurs Ouvriers de France, the quality of the organisation and training of the young apprentices.

When he’s not with companies, the young people he supports or in his Fishtruck, he indulges in other passions, such as photography.
