A craft microbrewery created on the cliffs of Champeaux in 2014, l’Ecume des Falaises moved to a former car garage in Jullouville in 2017. Its name is an integral part of Destination Granville Terre et Mer, the cliffs echoing those of Champeaux, overlooking the Bay of Mont-Saint-Michel, and the foam in reference to that of the waves breaking on the beach, 200 metres away. Your appointment is at 10am with Martial and Chloé, the two brewing partners, or Eric, their employee, who will welcome you and show you the choice of recipe. The recipe depends on the season: an amber beer in spring, a white beer in summer, a special triple for autumn or a dark beer at Christmas. It can also be a mild, slightly bitter lager, a strong, bitter triple or an India Pale Ale (IPA).

The Scum of the Cliffs

In the skin of a

real craft brewer

Once the introductions have been made, you’re off to the brewery after a description of the ingredients that are essential for makingbeer. Weighing the malt grains, heating the water, grinding to obtain themash… Once these first steps have been completed, it’s time to let everything rest. You take the opportunity to have a coffee. You then begin filtering the wort, followed by the actual brewing. This takes place in a large vat, and the know-how of Martial or Eric is passed on to you to add the ingredients, reach the right temperature and so on. Now that this important stage has been completed, you can enjoy a lunch break while the wort cools down, which will take around two hours. But don’t think you can just sit back and relax! You take it in turns to check that the wort has cooled to the desired fermentation temperature, and take the opportunity to disinfect the tools used, tidy up and clean up. It’s also a great time to get to know the brewers better, ask any questions you may have, discuss your recipes if you’re already brewing, or shop for your next tasting.

The beer wort is then poured into your canister, which acts as a fermenter, and it’s up to you to monitor its development, fermentation and maturation. You can then bottle it at home several weeks later. If you want to show off your graphic design skills, go so far as to create your own label! If you live near the brewery, you can bottle your beer on site. You’ll be proud to share your beer with your friends: “I made it! “
